John Townsend is a humble and unassuming man.
His Youtube channel started out covering regalia and gear for the re-enactment community. He listened to his audience. They told him they like the cooking content best.
In this nine-minute video, he talks briefly about the trials and tribulations of being a farmer before insecticides, herbicides, antibiotics, internal combustion engines and weather forecasts. He also alludes to the economics. The "best" was kept as seedstock. The next-best was sold to pay taxes and to pay back loans. The produce that was difficult to sell is what the farmer's family ate.
Even their Sunday feast wasn't so great. It was the tough, old hen who had stopped laying. It was root-vegetables that cost more to ship than they were worth. It was bread made from grain only slightly "better" than what they fed their animals. A bit of butter and maybe a glass of hard-cider.
