Hot sauce

I love Chipolte.  I hate spending money.

Locally grown jalapeño are available for $0.85 a pound.

Halved jalapeño and a charcoal fire
Apple wood
Two grilles running in opposite directions to keep the peppers from falling through as they get limp.
Smoke getting started.  I smoked them in two batches for about 45 minutes each.
Peppers, vinegar, sugar, salt.  I was going to put it in some Mountain Dew bottles but decided that was a BAD idea.
I tested it on a hot dog.  Hot enough to taste, cool enough to easily modulate.  Good to go.
